We make this delicious mix with our Unifine soft white whole wheat pastry flour, corn, rice, and ancient grains like spelt, Kamut®, millet, barley, oats, rye, and quinoa. Ancient grains are generally less processed, more nutritious, and more similar to their original ancestors than modern (often heavily industrialized) varieties of wheat, corn, and rice. We make the soft white whole wheat pastry flour in our organic pancake mix using our special Unifine milling process. In our unique mill, grain enters a high speed rotor, which instantly shatters it into fine flour—it even bursts the bran and germ! Air passes through the rotor with the grain and blows the flour out. Unlike regular or stone ground grain milling, the Unifine process does not heat grain during milling, so many nutrients and natural oils naturally found in the grain remain intact.
