Gluten Free Muesli is inspired by the traditional Swiss cereal developed by Dr. Maximillian Bircher-Benner. Like traditional Bircher muesli, this lovely blend of gluten free oats, nuts and seeds, and dried fruit can be enjoyed for breakfast in many ways: hot with brown sugar like porridge; cold with milk; or soaked overnight with yogurt and shredded apple.

Our gluten free muesli recipe is based on a breakfast cereal originally invented by Dr. Maximilian Bircher-Benner, a Swiss nutritionist, over 100 years ago. He understood that food is the ebst medicine, but he also knew that it wouldn't be eaten if it wasn't delicious. That's why our fantastic muesli recipe is a tasty blend of lightly toasted whole grains, brown rice crisps, raisins, dried appled and cranberries, sunflower seeds, almonds, pumpkin seeds and coconut flakes. It's unprocessed and has less sugar than granola. The end result is a highly nutritious cereal centered on whole grains that's addictively tasty to boot!

Consider our muesli a jumping-off point: pour coconut milk over these muesli flakes for a non-dairy breakfast, or add goji berries for extra antioxidants. You can also add peanut butter for extra protein, or top it with a mixture of maple syrup, honey or coconut oil. However, muesli isn't just for breakfast: you can eat these grains out of the bag as a snack or bake it up in cookies and quick breads.

Directions

 

Stovetop: For hot cereal, bring 1 cup of water to a boil. Add 1/2 cup muesli, reduce heat to medium-low and simmer for about 7 minutes. Remove from heat, cover, and let stand for 2 minutes before serving. Makes 2 delicious servings.

Microwave: Put 1/4 cup muesli to 1/2 cup water or milk in a large bowl. Microwave on high for 3 minutes, stopping to stir once during cooking. Makes 1 marvelous serving.

For cold cereal, add 1/4 cup muesli to 1/2 cup yogurt, milk or fruit juice. Let sit for 5 to 10 minutes. Makes 1 terrific serving.

To make 1 serving of Swiss-style cereal, combine 1/4 cup muesli, 1/2 cup yogurt and 1 cored and grated apple (including the peel). Cover and let sit in the refrigerator overnight.
