Lentils are not only versatile, nutritious, and delicious—they’re old. It’s believed that humans first cultivated them in the Fertile Crescent, and archaeologists have found carbonized remains of this ancient legume in Syria, Jordan, Turkey, Iran, and Greece, some of which date back as far as 6000 BCE! Today, they remain popular worldwide and are most commonly consumed in west Asia, Latin America, the Mediterranean, and southeast Asia, where they form an important part of Indian cuisine.

Lentils are packed with protein; the only legume with a higher ratio of protein to food energy is the soybean! Additionally, they are a rich source of vitamins B1 and B5 (thiamine and pantothenic acid), folate, iron, zinc, phosphorus, copper, and manganese.

Our organic red lentils are milder in flavor than darker varieties. They also cook more quickly and form a puree readily, making them ideal for loaves and burgers. Azure customers love to use them as a meat substitute in everything from sloppy joes and burgers to chilis, casseroles, and salads. Red lentils make for a quick and convenient meal, as they cook in 15–20 minutes and don’t require pre-soaking like larger legumes.

Directions

Cook using 3 cups liquid (water or stock of your choice) to 1 cup dry lentils. Be sure to use a large enough saucepan, as lentils will double or triple in size. Bring to a boil, cover tightly, reduce heat, and simmer until tender. Cooking time for lentils is typically 15–20 minutes.
