There’s no USA national bean—but if there were, it would have to be the navy bean! Not only do these beans get their name because they’ve been a staple item on the US Navy’s menu since the 1800s; they’re also the key ingredient in Senate Bean Soup, which is served every day in the US Senate’s dining room. Navy beans also go by many other names, including haricot and Boston bean. They’re even sometimes called Yankee beans!
Here at Azure, we love them for the same reasons as the Navy: they’re inexpensive, tasty, and a filling source of many nutrients, including protein, fiber, iron, vitamins B1 and B9 (thiamine and folate), magnesium, and manganese.
With their mild flavor and dense, smooth texture, our organic navy beans are perfect for baked beans and soups like minestrone soup. But if you ever open your pantry and find you’ve run out, rest assured that all is not lost—you can substitute other white beans like great northern or cannellini beans in most recipes.

Directions
For 2 cups beans, add 10 cups hot water. Boil 2–3 minutes. Remove from heat, cover, and set aside for one hour, and up to four hours or more. Discard soak water. Place soaked, rinsed, and drained beans in a large saucepan with fresh hot water. Water should cover beans by about 1 inch. Add 1 Tbsp cooking oil, butter, or olive oil to reduce foaming and boil-overs. Boil for 10 minutes, then simmer for 1–2 hours.
